An ice machine that stops in July costs a restaurant or convenience store real money every hour. Most of them stop for reasons that scheduled cleaning would have prevented.

Common ice machine faults
Scale build-up on the evaporator, a dirty condenser, a failed water inlet valve or float, a stuck harvest cycle, a bad water pump, a failed control board, a refrigerant leak, or a water filter nobody has changed in three years. Thin, cloudy, small or slow ice all point somewhere specific.
Cleaning and sanitizing
Ice is a food product and inspectors treat it that way. We perform full deep cleaning and sanitizing of the evaporator, water system, bin and dispenser on a schedule, plus water filtration to slow scale build-up in North Texas’s hard water.
Most ice machine failures are water, not refrigeration
Ice machines fail more often than any other piece of commercial refrigeration, and the reason is that they are the only one running water through themselves all day. North Texas water is hard. Scale builds on the evaporator plate, and once it does the ice stops releasing cleanly — you get thin, cloudy or hollow cubes, then a machine that runs a full cycle and drops almost nothing.
The instinct is to assume the refrigeration has failed. Usually it has not. Usually the machine needs descaling, a new water filter, or a water inlet valve.
Slime, and why it comes back
The other half of the calls are biofilm — the pink or grey slime that forms in the water trough and the distribution tube. It is not dangerous to the machine, but it is going into drinks, and it is the thing a health inspector looks for.
Cleaning it once does not fix it. Biofilm returns on a schedule set by your water and your kitchen, which is why ice machines are the one piece of equipment where quarterly service genuinely pays for itself. A machine on a cleaning schedule makes more ice, uses less power, and does not fail in July when you need it most.

Ice Machine Repair — questions we get asked
How often should a commercial ice machine be cleaned?
At minimum twice a year, and quarterly in hard-water areas or high-volume kitchens. North Texas water is hard enough that quarterly is the realistic answer for most restaurants.
Why is my ice machine making small or cloudy ice?
Usually scale on the evaporator plate, a water supply or float problem, or a low refrigerant charge. Cloudy ice specifically points at water quality and mineral content — a filtration issue as much as a mechanical one.
Why is my ice machine making small or hollow cubes?
Almost always scale on the evaporator plate, low water pressure, or a failing water inlet valve. It is a water problem before it is a refrigeration problem, and it is usually fixed in one visit.
How often should a commercial ice machine be cleaned?
Every three to six months in North Texas, and closer to three if you are on hard municipal water. Manufacturers require documented cleaning to honour a warranty claim, so it is also the paperwork that protects the machine.
The machine runs but produces no ice at all. What is that?
Could be water supply, could be a stuck harvest cycle, could be refrigerant. The useful detail for us is whether it completes a cycle and drops nothing, or never gets to harvest at all. Tell us which when you call and we will bring the right parts.
